    • I used a basic shortbread recipe:-

      125g butter
      55g castor sugar
      180g plain flour

      Heat the oven to 190C
      Beat the butter and the sugar together until smooth.
      Stir in the flour to get a smooth paste
      Place on to a work surface and gently roll out until the paste is 1cm/½in thick.
      Using a round cutter cut out discs of shortbread
      Using a slightly smaller cutter gently press on the cut out discs to create an inner line
      To finish off use a skewer to make four holes
      Place onto a baking tray. Sprinkle with caster sugar and chill in the fridge for 20 minutes
      Bake in the oven for 15-20 minutesuntil pale golden-brown
      Place on a wire rack and when cooled taste and enjoy
